Flux attracts moisture. Moisture on a board is bad. So, you remove flux when you do board repair.
Have I ever seen a board shorted because someone left the flux on it? Nope.
But, it's a generally accepted principle, just like wiping down your stove after you make dinner, because something splashed out of the skillet onto the stove 
It's just good housekeeping
