you may have disturbed other switches under the playfield. check drop targets switches

in your video, it looks to me that the middle pop is the issue. The other pops do not trip the specials. also, the middle pop scores 3k after the specials light...Is that right?
I think you have 2 problems. Your coils are running at 57 volts rather than 53. Its like high tap. It wouldn't change the logic of the game.
The drop target liberal setting requires you to clear the targets only once to achieve specials. Conservative is twice, if memory serves.
There is still the issue of the center pop lighting specials and scoring 3k.
If you don't like the faster paced game, change the red back to 53 volts. If your cool with it...leave it.
Re-examine the center pop work.
Try this. Start the game and knock on the playfield at the center pop area. Dose the vibration of the knock energize the circuit for specials? If so, look at the contacts. If not, then its an issue your wiring or solder blob, etc.
