My bet is that they anticipated the B&W vs color debate, and will use the controversy to their advantage. People who really dislike the B&W but want the lower playfield will either spring for the LE or buy the Pro and live without it. Then later, if this game proves pretty popular, they'll release a full color Premium vault edition "due to popular demand". This would satisfy everyone and lead to at least a handful of people buying the game NIB twice, or paying more than they intended to the first time to buy the LE.
I personally think the B&W version looks better than the others. Plus on location I feel like in a row of 16 games your eye would linger on this more than the others and it will probably draw more coin as a result.
But yeah, looks fun. Can't wait to play it.
