South Park has a god 5 ball MultiBall. Depending on the settings, they keep coming firing out when drained for a set amount of time. But you have to enjoy the theme
Bally Heavy Metal Meltdown has an awesome 5 ball chaotic multiball...they shoot out from the ramp lock all at once and it is a bit tough to keep them all in play or to cradle them...great and underrated game
Judge dredd 5 ball seems the most contolled to me probably because alot of the shots feed the flippers.
JP might win on both.
Second-stage of the 5-ball multiball is called 'Chaos' (after you hit all the C-H-A-O-S shots in the first stage) with a pretty cool callout. It is named after the criteria so it has to qualify
And the multiball is also necessarily very controlled because your jackpot is multiplied by the number of balls still in play.

Guns n Roses multiball can range anywhere from 2 - 6 balls, based on the number of band members added by the player, and is probably my favorite 5+ ball multiball.
As for the other question, it seems impractical for anyone to control a 5 ball multiball, and I'd probably just shoot on the fly until I'm down to 3 or 4, and then start getting control at that point.
I'd say The Shadow's Final Battle is pretty controlled (if you do it right). You have ball save for 30 seconds, so hit one ball into the Battlefield and ignore the other four balls. They're only there to distract you. They'll bounce around the playfield hitting stuff while you clear the Battlefield, so when ball save ends you should only have a few more shots to hit, which is much easier to do with two or three balls than with five.
