Good luck.
I have touched up many playfields and used many techniques.
I would get a magnifying visor and put in the strongest lenses.
You can do your touch ups in close up range so when you step back they look great.
Also by some low tack frisket and spray the larger areas either with an airbrush or a rattle can spray bomb.

Get latex paints at the craft store to limit your mixing.
Good luck and when it starts to be a chore or you start making mistakes, stop and go back tomorrow.

It definitely has a ton of potential.
This Trident was my first real touch-up effort.

I did a Big Brave that way.
Nothing to protect the touch ups.
10 years and nearly 3000 plays and it did well. It did start to deteriorate by the time I sold it but still looked much better than it did when I got it.

I have used 3 methods to remove mylar.
The High Speed I am restoring right now had the mylar put on after it was worn and on top of the dirt and crud.

I have used goo gone and a plastic spatula. Tedious but good enough for the small ones around pop bumpers or in front of slings.
Heat: not a fan of this method.
Freezing: This one worked the best for me.
on High Speed I poured a few drops of liquid refrigerant on the mylar and it pulled right off. You still have to remove the adhesive though.
