When I played ES at Pinburgh a few years ago, they put a small shim under the flipper rubber that effectively killed the sweet spot for the ramp shot. It was effective in killing the center ramp strategy but made for an overall poor playing and not fun ES. 
Looked something like this:
Another way to possibly gimp ES is to run a stiff wire guide or similar from the left post.
