Countdown, El Dorado, Seawitch, Pinball Pool, Eight Ball Deluxe, Meteor... pretty much any early Stern Electronics or Gottlieb Sys 1, imo, will give you a good drop target game.
If you like drop targets you're likely looking at a good portion of late EMs and early SS where drop target banks are a primary feature.... 2001, Nine Ball, El Dorado, Sinbad/Eye of the Tiger all jump out at me.
If drop target banks are boring, look at games which use them in other interesting ways. Inline drops for bonuses Flash Gordon and Centaur, or for ball locks in Fathom. Ramp blockers in Space Shuttle, TX Sector, and GoT. Last but not least, mid playfield drops like Cactus Canyon and Defender.

I always liked this idea, which is why I'd love to see a break-out type Wizard Blocks game made that is based around it.
Cue Ball Wizard. The drops aren't really the main feature (right ramp) but I can't help but want to knock all of them down. And it's fun to hit the bank shot off of them.

I find myself not even shooting for the drops in WPT unless in multiball. EBD I think is the better game if judged solely on the use of drop targets.

+1 for the Toast. Other good one's. Stargazer (9), Seawitch (11), Mystic (9), Skateball (11), Dragon Fist (9 Perfectly placed). Just so many from the 80's. Even Barracora.
"Excalibur" has a total of 16 drops! I have one, it definitely gives that 'one more game' feeling.

I believe, not yet mentioned as a great drop target machine, Stern Nine Ball - all drop target game.
