Up by the left rear castle tower the wirefor for the catapult is bolted to a hex post. Loosen and move 1/4 inch at a time until you get it dialed in. Left or right.

Nothing to do with the spring. There is a bar the lever moves back and forth. The screws raise or lower that bar. The spring holds it into position.

I know you've gone over all the connectors. But this really looks like an open line from transformer to power supply board.
I'd unplug the game, and starting back at the transformer, wires leading from transformer to power supply board. Unplug each connector you run into, look at both sides over for a male or female pin sticking out. Then plug them back together and push together really hard.

May as well go over the underside of the playfield again, and up into the backbox. Otherwise we are stuck until the engineer contacts you. I know when you moved the playfield once things got worse, may as well go over the main cables in the rear and check what they may be moving.

Remove the troll carriage, one connector below the playfield, one bolt holding the carriage collar to the plunger. For the left one remove the wireform over it, then lift up, turn left so the thing that triggers the up/down switch clears the playfiled. Then you can easily work on it at a bench or table.

The coil/plunger upkicker is fastened to the end of the ball trough with four screws. Loosen it, lower a tiny bit. Retighten.
Your plunger is up a tiny bit too high. That whole bracket is adjustable.
Your game is too new for any of the old things like magnetized balls or divots in the bottom of the ball trough.

Yes I have. Same issue on many original MM's too.
I'd loosen the bracket under the playfield. Slip a spacer or washe between left side of bracket and playfield, retighten the screws.
Then the ball sits in there better and gets a better kick out.
