What game that looking at playfeild looks simple but reading the rules kicks you in the "Beep"

Yes, Catacomb is messy as SS games go, and is an excellent example of what the thread title asks. It was more convoluted than I wanted to deal with in my guide when I put it out; I'll add the game some day, though. I'd say Doodle Bug and it's siblings are among the most unexpectedly tricky games.
As for Volley, that's just because people jump to the wrong conclusion about it and neglect getting the top lanes before they start shooting drop targets. I had someone at a tournament just a week ago ask me about Volley and go "Oh, now I get it!" when I told them, then thank me later when that tidbit helped them succeed in their match.

Don't find anything that confusing in it's rule set.

That's a communication issue from the machine for sure. It's completely linear, but not good at explaining a few of the tricks you need to complete.

I thought it was quite easy myself, and even my non pinhead friends were able to pick it up fairly easily after a brief explanation. I can understand some confusion though like the callouts don't really specify what the shot is, and theres 2 (3?) tricks for every shot, but if you look at the artwork you can put 2 and 2 together.
Totem maybe?
Definitely High roller casino. What you want to shoot depends a lot on game state. You want to have all pops lit before playing roulette. You want a good blackjack or poker hand before playing them. Etc etc. You can make every random shot but someone with rule knowledge will destroy you in 1/10 of the shots.
