The control panel is a tricky one, I just went with a two player 6 button setup plus a spinner. I would have liked a track ball but its just to big and I wanted a small cabinet. If you go with analog joysticks you can play most track ball game and its reasonable. The most important thing for me was a rotatable 4x3 screen.

This is what I used in mine as well, super happy with them. They are a bit on the higher end but totally worth it.

This is so true, as soon as I got MAME, Hyperspin and Daphne all working I turned of the network card. Daphne was probably the worst to get dialed.

I think I had some of the more obscure ones working as well but never bothered adding them to Hyperspin. I could just put the whole directory on a google drive or drop box.

Took a look at my cabinet and the only games I have working in Daphne is Dragons Lair 1&2, Space Ace, Cliff Hanger and M.A.C.H 3. I have other roms but looks like I don't have the video files for the other games.
