Reseat the LCD connector at CN6. Even if it looks like its plugged in many times it could be loose. What connector ID do the instructions tell you to install the topper on?

Quoted from Jimmyhonda:Topper is RJ45 cable and a cable to CN7. It was a very simple hookup. That’s why I’m shocked the LCD isn’t working now. With the topper completely disconnected or connected, the LCD display is out. The LCD display was working fine before.
The manual from Stern has a part in yhe beginning about the Spike 2 system, and how it isolates short circuits from different components so it doesn’t harm other components. Perhaps the LCD shorted out somehow? Id def reach out to Stern with the serial number on your game on Monday, and see if they can help.
