Mob Museum (downtown, two blocks North of Fremont Street). I highly recommend adding an optional item as well. Distillery tour/tasting and Crime Lab are two I've enjoyed.

If you drink, go to I Love Sugar's upstairs bar. Between the two couples, get at least two giant "Martini's", one small drink, the boiled up Gummy Bears and the Lik-M-Aid.

Enjoy at least one nice dinner on the Strip. Smith & Wollensky if you've never been to one. Maybe Lawry's the Prime Rib, which is my favorite, but is three blocks East of The Strip.

I'm guessing you've been to the top of The Strat (FKA The Stratosphere). If not, go there. Maybe try one to three of the thrill rides as well. Dinner up top is excellent with excellent service as well. Pricey but it's Vegas.

    Quoted from woody76:

You could spend weeks in Vegas and not do everything there is to do. It is a wonderland of amazing things. I don't even gamble when I go and July is a great time to go. I wonder if there is a UFC fight while you are there? I saw UFC 100 in Vegas and it was freaking amazing.

Trivia: if you see a fight at UFC Apex, know that it once was a Bally factory that made Specialty slot machines, card shuffles and automatic casino table games....

The Peppermill is on of those looongstanding cool places in LV. I always try to hit when visiting. Been going there since the 70s!
All of the other suggestions so far are great.
I’m looking forward to one place I haven’t been yet, Omega Mart in Area 51. It looks like a wacky good time. They have lots of YouTube videos, you can check it out and see if it’s your cup of tea.

The whole Area 15 complex with Meow Wolf and Omega Mart is a fun attraction. Their is a Locals discount as well.

I assume you guys are talking about Area 15. The Lost Spirits Distillery is there too. I don’t want an uber to drop the guy off at Area 51 in the desert.

I drive by it every few days, still get 15 & 51 mixed up....
