I've seen Williams flipper bats installed of the gottlieb ones before, but I haven't seen someone swap out the whole assembly.
Why would you want to? The game wasn't designed for WPC style flippers.

The bats--not much, although gottlieb bats are probably a bit heavier. A flipper assembly, yes.
