I'll second this.
Altered Carbon became one of my favorite shows. It's a smorgasbord of sci-fi concepts wrapped into a high budget effects heavy extravaganza. Think Blade Runner meets Ghost in the Shell with a dash of Snow Crash and a dozen others along with new concepts. The world building reveals and plot are trickled out and so it's deliberately obtuse to start, but it's well done and for effect. A bit more gratuitous Cinemax style nudity than I prefer, but it's done on message for the world building and not just base titillation.

I think I'm up to episode 5 of season one and have been enjoying it.
Much to my surprise, because I thought the premise was dumb and avoided it for months, the show during the pandemic era that has been my absolute favorite is Ted Lasso. It's worth doing the free trial of AppleTV+ and just binge the 10 half hour long episodes. I did not think a show that is clearly not a kids show could embrace relentless positivity and be so genuinely hilarious and yet somehow avoid being stupid or saccharine sweet. I'm jealous of those who haven't watched it yet, because you still get to experience it for the first time.

It's not new but, I just bought the complete Deep Space Nine DVD Set, and dived back in at the beginning.
DS9 was a good show and they hit their stride after they stopped being problem of the week and starting copying the serial long story format of the even better sci-fi show that was on at the time, Babylon 5.
I still contend the 3rd and 4th seasons of B5 was some of the best sci-fi ever on TV.
If you’re into the swords and sorcery genre, I’d recommend The Legend of Vox Machina that just dropped on Amazon Prime. Amazon picked it up after it made a bazillion dollars on kickstarter. It’s based on the first D&D campaign of the popular Critical Role podcast. Not for children.
Around the world in 80 days on PBS by way of the BBC is also a fun adventure. This version stars David Tennant of Doctor Who fame and builds and develops quite well with interesting character development alongside the globetrotting romp.
