Combine the scores of the Pro AM TEAM for total result. Total score that wins is high or low however you do the scale, The Pro has a vested interest in making sure his NOOBS perform well. He coaches them in the practice session, and also in the game. So they have a tutor with them at all times. And they can do silly shit like 'name their team' before the tourney.
Make prizes at party to generate excitement ....bottle of booze, etc. You can also have a prize for PROS only and have their tourney run concurrently. A sleeve of new pinballs for example.
AND ....you can have at the same time....the NOOBS compete against each other for the best of all their scores as well .... king of the NOOBS so to speak. Pros draw NOOBS name from a hat for fairness , no wives coached under spouses ...asking for trouble if you do.
make an excel spreadsheet and put it on the tv in room so people can view the LIVE standings. have a halftime break - eat drink. etc OR.....switch up teams at halftime!!! RE - Draw names!!!
You could do pingolf this way also, but noobs may struggle to hit targets.

Sounds like a lot of fun. A variation of this I heard yesterday is to have a tournament with teams of 2 people (maybe one experienced player and one noob), and play three games on each machine, combining the scores. One game by each of the two players and then the last game have one person control the left flipper and the other person control the right flipper. Then watch the hilarity ensue.
