I've leveled inserts by filling with UV clearcoat: apply enough to pool up (having perfectly leveled the playfield), then cure with UV lamp. It worked reasonably well.

But the best overall solution is to simply use a playfield protector if they make one for your game. I did that for Blackout and it made it super fast and super smooth!
