How to run a tournament?

So I've been in talks with a local bar owner about starting a pinball tournament/pub crawl-typed event around our neighborhood. How would I effectively do this? The few ideas I have are here:

We'd need an official scorekeeper at each of the bars to make sure the scores get marked officially.

    ......

    ....
That's pretty much all I have.

I know REAL tournaments have all sorts of settings turned off (ball save, extra ball, etc) but I'm not sure that's an option here.

How would the scoring go? How many games on each table should we have? How is the winner decided? Total score on every machine then added, or the person with the high score on each machine earned 1 point and the person with the most points at the end wins? I don't really know. If anyone has any ideas to help out with would be greatly appreciated.

How many machines are there to play? When we played in a tournament there were 40 people entered and they split us up in 3 people teams. There were clip boards at every machine to be played in the tourney, after your 3-ball game you simply would write your score in on the clipboard and move on to the other machine and repeat! After the tourney they tallied up the scores you got. Whoever had the highest points total in all games was first place and so on. really simple process and was fun. It would have been better if we could have had some beer to drink, but it was at Castles N Coasters which is a Family goofy golf place in Phoenix. 30+ pinball machines to play as well.
