I know you say escrow.com protects both parties but I’m guessing,from the seller’s point of view, a cashier’s check or wire gives him all the protection he needs. Worrying about the protection of the buyer is probably not on the top of his priority list.
With that said, take a quick flight out, meet the car carrier that day, give the seller the check and then fly back that day. Easy peezy lemon squeezy.
