There is no replay for early SS Bally pins. If you have working batteries installed, instead you can set the replay value to be a very LOW score in the adjustment/audits menu... (Like 15,000 points.) The adj./audits are AFTER the lamp/display/sound tests by pressing the red button in the coin door. Also make sure that the "hi score award" DIPS on the MPU are set to "Replay" and not "off" or EXTRA BALL. THese are different for each game so you will have to look up the setting in the manual.

Now, when 15,000 points is reached (probably on every game), the knocker will fire and award a credit for the next person that wants to play. You should be able to find the Speak Easy manual on ipdb.org
