Jersey Jack, 2013I was looking at it last night trying to fix the witch and it looks like it would be pretty easy. Everything unplugs so you can just unplug, label swap over and plug back in. Since my wife had a fit when I was going to sell mine I have started playing it more and it is actually a lot of fun. I hope the new PF doesn't do the same thing after I swap it out.
Last year, I took photos of JJP's assembly line and each individual playfield assembly station. That might give you an idea of what's involved.

[edit]: I just realized that I may have misread your post--were you asking about swapping entire assembled playfields, or swapping all the playfield parts from one playfield to another blank playfield? If it's an entire assembled playfield, yes, it's just a few connectors. The playfield was designed to be removed from the cabinet without too much hassle.
