In my opinion, the only fuse that needs to be changed is the "general" fuse mounted on the power line.
All those mounted after the transformer do not need to be replaced since the output voltage should be the same, whether it is 110v or 230v.
The rule for this fuse can be inspired by the Gottlieb SYSTEM 80, where the power supply arrives also on a transformer. For US models, a simple transformer was used, but for exports models (Japan and Europe) a more complex transformer was used (while Japan was also in 110 volts). This one had basically, two primary windings mounted either in parallel (in 110 volts) or in series (in 220-230 volts). The only fuse that changed was actually the fuse of the sector (F9). In 115 VAC, it is a 5 A SB, whereas in 230 VAC it is a 2.5 A SB.

So, the rule is simple : for 110 VAC, double the value used in 230 VAC.
For Zaccaria Space Shuttle, yes, the schematic is missing for the transformer !
But as far as I know, it is no so far away from the Gen. 2. Of course, some Gen. 1 use a second transformer and the Gen. 2 has a fuse/voltage-selector switch. The Gen. 2 transformer is quite simple, with multiple primary inputs:

Looking at the pictures at http://www.zaccaria-pinball.com/gen1/transformers.html , the Gen. 1 transformer is about the same and not very complex.
