I'm pretty sure the +5v is for the board logic. It wouldn't amplify the video signal. Increasing the board logic voltage would just cause damage on the boards.

I was making a few assumptions about the system, so I'll defer to your experience with the machine. The video did a good job explaining what the signal voltage was and what it gets boosted to.
