    What is the small metal rectangle piece with two holes in it called, that you run the screws through to hold the flipper switch onto the flipper assembly?

    That'd be the cover plate.

    The black metal piece into which the screws are threaded is called a "Tinnerman" or "speed" nut; part number 20-6516.
