IMO, fan layout = shots originating from the center of the playfield typically terminating in lanes. Outer lanes typically orbit, innner lanes typically return to flippers.
The greater the number of these features, the more fan like a layout is.
Fan = AFM
Non fan = Firepower
Edit: as I was writing, MOF and Levi basically said the same thing.
