You should be able to convert back. Will need to find a chime box (obviously) also trace back on the schematic to see if you need to adjust/add/subtract based on what the current state of those chime circuits are. Should be a switch that closes on the 10/100/1000 point relays to activate the chimes.

Just saw one on Ebay and now it's gone. (did you buy it?) They do come up occasionally. Ask around....
