The eos switch opening allows current through the second coil, increasing the total resistance, which reduces the current, and thereby reduces the strength (and heat).

Make sure the eos switch is making and breaking contact, and measure the primary and secondary coils to make sure they are both good.

A struggling solenoid will also buzz. Make sure the score units are clean and moving freely.

Indeed, the plungers should definitely slam into the stops and stay there as long as the coil is energized. You may have the wrong plungers or links, or the flippers are binding up on the playfield.
