I'd have to say Playboy is the easiest, but that theme may not fly. (God bless her if it does, though).
High Roller Casino is also pretty easy. Nascar is not too tough to get stuff going.
Personally I think the ultimate newbie tractor beam is Terminator 2, but you said Stern...
Have you tried switching your LOTR to its easiest difficulty setting?
