Bioshock might be a cool steam punk style theme. Of the ones already mentioned Castlevania seems like it could be done in a cool way. Perhaps the new Netflix show will bring a rise in popularity too.

I totally agree about a Western Theme. I've been pitching, a western game where you play as an outlaw and your score represents the price on your wanted poster. You try to build up your notoriety by robbing banks, outrunning the law, or dueling with rival gangs.

I was inspired by an even lesser known game, Secret Panchos. I think there are titles like that, where a lot of work has already gone into the artwork, characters, soundtrack, call-outs, etc. It would basically seem like it's an original theme, but you get some material to work with.
