Daft Punk could be a great pin or an awful one. Same with most themes. There are very few themes I wouldn't enjoy if done well.

Flavour of the month? They've been huge since 1996 when Da Funk was a hit then 1997 when Around The World became big with that awesome video and Homework became a commercial and critical success. Thomas Dolby is a ridiculous comparison to make and although they haven't been around as long as AC/DC or Metallica I'm sure they have just as big a fanbase.
The most important thing is that they sound much better than both those bands. Plus they are electronic which suits pinball more than Rock n Roll or Metal.
Instead of crowbarring Daft Punk tracks into a game I'd rather the guys work in partnership with the pinball designers to create all the sfx and music for an original themed game based around the band. It's never going to happen but I can dream.

The Tron: Legacy soundtrack was composed by Daft Punk but the actual finished score was arranged and orchestrated by Joseph Trapanese and was a two year long collaboration so some credit has to go to him.
