A 1N4004 has a 400V rating and a 1A continuous current rating. It is pretty slow.

A 1N4148 has a 75V rating and a 300mA continuous current rating. It is pretty fast.

Right that'd make sense. Can't claim to be an expert on the subject, but imagine in some cases the type of diode plays into what the software expects for de-bounce timing and using a different type that's faster or slower would cause some issues. Really doesn't seem to have much to do with amperage or voltage ratings with solid state switches being low voltage/amperage. Durability under the playfield as Homepin mentioned would also make sense for type chosen.
