I had my one pinball machine choice one year ago, and selected a NIB Wonka SE. Love it, and it has been a great and reliable machine. I now am up to four machines. And I keep a tape measure in my cramped game room like a Tetris addict, brainstorming how I could manage to squeeze in just one "final" machine. So start with the one YOU like the best, but most likely you will add more over time.
One other thought ... you mentioned DE Jurassic Park ... the Stern JP is an amazing game, hard to find at the moment but maybe consider that one for your shortlist.
