Whatever makes the game feel the most fun to you.

Typical Bally leg adjustment is in the Mr/Mrs Pac Man manual:

Seriously, I usually start at about 6.5 degrees if you have an inclinometer and go from there. But as Bobby said, whatever makes it the most fun.

5.5 to 6 degrees works well on early SS Ballys.

I just raise the back legs as high as possible and lower the front legs as much as possible.

If it's too fast, I lower the back legs a few turns.

I don't bother with measuring degrees. I just measure the fun.

well actually now that you mention it Xerico, with the levelers all the way up on an 80's SS Bally you pretty much have 6 degrees of pitch.

I raise up the back all the way and add about another 3/4" with a spacer block under the leveler. Sounds nuts, but its almost necessary to get the ball speed up in a room with otherwise dmd newer pins. Try it and see, it's not like the ball won't make it up the ramps lol!

More incline is not always better. Mr/Mrs pacman plays like CRAP with too much incline. The upper playfield becomes worthless.

Older games were designed with side to side motion in mind. That's why you see odd pop bumper and sling arrangements.

It's pretty short sighted and missing half the idea of pinball to always want to get the ball back to your flippers as fast as humanly possible.

Find the right balance for the specific game. That only comes from playing it and tinkering.

Quote of the day! Made me smile.
