Setting up a fathom and couldnt find the pitch setting in the manual.
I just raise the back legs as high as possible and lower the front legs as much as possible.
If it's too fast, I lower the back legs a few turns.
I don't bother with measuring degrees. I just measure the fun.

I raise up the back all the way and add about another 3/4" with a spacer block under the leveler. Sounds nuts, but its almost necessary to get the ball speed up in a room with otherwise dmd newer pins. Try it and see, it's not like the ball won't make it up the ramps lol!
More incline is not always better. Mr/Mrs pacman plays like CRAP with too much incline. The upper playfield becomes worthless.
Older games were designed with side to side motion in mind. That's why you see odd pop bumper and sling arrangements.
It's pretty short sighted and missing half the idea of pinball to always want to get the ball back to your flippers as fast as humanly possible.
Find the right balance for the specific game. That only comes from playing it and tinkering.
