Seems as though they offer an LED as well as an LCD version. When I look at the videos though they appear to have the same appearance. Is there a difference? There is a slight price difference. I would prefer a smoother looking display (less dotty). I am thinking an lcd would be the way to go

Yes , LCD more desirable. It has function button for dots, dots xl, smoothing display options.
From the ColorDMD homepage;
If you're purchasing a color display for the first time and unsure of which route to choose, LCD is probably the safe choice. It is the display we have sold since 2012, is a bit easier on the eyes, and supports options for customization (including large dots and high-resolution upscaling modes).

Hello, i have a dmdcolor LCD in my TWD, it is perfect !

Based off of your criteria, you'll want an LCD. I'm a fan of dots, but some games look better in Hi-Res. A game with more cartoony animations would benefit from the Hi-Res mode the LCD can give, like TWD or TSPP.

If it has more video animations, like GoT, then I think LED would be better.

Just a heads up that the LCD is bigger than the LED you're replacing and fitment inside the newer Sterns isn't like factory. There is some offset that allows you to see inside the backbox from the side. Requires some foam to close up.

Or maybe I installed it wrong.

Either way, just something to be aware of.
