You probably aren't going to find much love for cocktail arcades.
They are so much better in theory than they are for actual function.
I just had to have one, then I realized it just wasn't so great when I actually had it.
Awkward to sit at, hard to find a good place for and when you were a kid they were huge, when you are an adult they are tiny.

If you/they must, a pacman or ms pacman with a 60 in 1 is probably the best bet for old school games.
Turns the start button into a fire or jump button, that's about it.

A working cocktail is only worth $500 or, i'd assume arcade shop adapters could turn it into a 60 in 1 for another $100 total.

Me? About the only cocktail table i'd own now is a track & field 4 player.
