Just a quick comment since I deal with this daily in my designs: They might have a different voltage rating, or the dielectric (the 'stuff' between the plates) has different properties. Could be ceramic, porcelain, X7R, Y5V, etc. Usually you trade one property off for another (i.e for size vs. performance, etc.).
