It will be a little stronger. Yes you can.
23 is the gauge of wire. 800 or 840 number of turns. Less turns makes it stronger.

I thought more turns in a given length increased the strength of the magnetic field?

Not in pinball coils.
Less turns stronger more turns weaker.
