I would finish stripping the top, touchup just the black keylines, epoxy the inserts in solid, and spray a leveling clear coat. Put it back together and play. Now it's flat and protected. Can continue with restore work anytime you get the itch but don't have a 6 month restoration process to wait through to be able to play it.

Keylines are all the black art. It is the last layer screen printed and therefore wears first. I find that taking a very fine brush and fixing all the places where the keylines are damaged makes a worn playfield look 90% better. It has something to do with how the brain puts images together. If the outlines are solid, damage to the color fills are easier to ignore. It can be a tedious process but it is nice to have the keylines fixed up beneath the first layer of clear.

I cut stencils on a Silhouette Cameo, use transfer tape to apply the stencil and airbrush them on. The results are great.
