I need to rebuild a backbox door (the piece of wood with the lights and displays mounted to it). I want to cut a new piece of wood and completely rewire the lights but really have never had to do this before. Where is the best place to buy these wires that I'll need to do this? I need the silver wire that links them all together and also the colored wires that control "match", "high score", etc.

but why do you feel the need to replace the colored wires?
I have an entire harness from a Bally SS I could sell you that should be more than enough wire and have plenty left for any future repairs.
