Fliptronics boards only use the EOS switch for monitoring flipper action, and telling the MPU when to switch to low-power. There is a timer in the OS that will not let the high-power coil drive for too long, even if the EOS switch is broken.
You can safely operate your game forever without the EOS's connected up. But, you may get flippers too strong, or weak, or in-between, depending on the fliiper action and the timing of the commands sent to the Fliptronics board. (And, well, error messages/credit dot.)
