Hit your chosen villain twice to start the bat phone ringing.
Choose from Catwoman, riddler, joker, or penguin.
Hit the bat phone to start that villain.
While the phone is ringing (before you hit it), if you qualify a different villain, the mode will change to that villain.
Once you hit the bat phone, you can not change the villain until you complete the first stage. Then you can choose to cash in, or continue.

Also, you can change which episode for each major villain you'd like to play through. This is done while there is no major villain mode currently active.
