those instructions for the shadow are for easter eggs in the game, not replacing initials for a score.
once the initials are fully entered, they're locked in. when you are entering them, you scroll through the alphabet with the left and right flippers and press the start button to lock in each letter. if you mess up a letter, you can scroll through until the back arrow or DEL character is showing and hit start to delete the last letter
yeah, they're locked in. most (not sure about all) games will time that initials selection process out after awhile. you'll have to beat your score and be ready to enter your initials again next time
