I know these overlays exist, but I can find a list or pictures of what's out there and who is selling them.

Can someone please direct me to where I can find this information? Or tell me why it's a secret..

It would be great to know what's available when looking at project machines to restore.

Yes, I know Classic Arcades is the place that sells the overlays on eBay. However, they do not have a list of these posted on their website.
If there are a number of different titles available, I would like to know what's out there!

Quoted from Gov:

concerned with accuracy Classic Arcade should be fine

Take a look at my Flash Gordon pictures on my "gameroom photos" in my profile. That overlay came from Classic Arcades.
Then look at any original playfiled. There are registration issues from the factory!
I think this all depends on what playfield Classic Arcades used to scan vs. your playfield.
I agree, they're not perfect; but it's a good option.

I really wish these were publicly listed. How do they expect to make a sale, if there is nothing on their website?

Quoted from WonkoTSane:

Has anyone tried clear coating over one of these yet?

Yes. My FG is cleared over.
I cut off all the fake wood on the sides, so all the wood seen is the original playfield.
