My own 0.02 is that you should be clear on what restoration services you offer and your qualifications. Seems like there are many different skill sets with pinball restoration and repair. I know someone who is great with circuit boards and with SS machines in general, but not too comfortable troubleshooting problems with EMs. Chris at HEP does not do EMs, but clearly he is considered by many the gold standard os SS restoration. I know people who are really excellent at EMs and seem most comfortable with those games, such as TimMe, and for repair in SoCal, Don Mueting. For cabinets, the webbing on the wedgeheads is a particular skill, and I have seen huge differences in quality. When cabinets are bad, the HEP way is to replace rather than repair in restorations. That takes woodworking equipment and an ability to make cabinets. Playfield work is a different skillset also. I personally think it is hard to be an expert in everything when there are different skill sets.
