Sounds like you have a plan already, but here's what I do:
1) Fold head down and secure with a strap.
2) Remove back legs while propping on my thigh/knee, slowly lower to the ground.
3) Tip up onto back. Remove front legs.
4) Put on dolly and roll over to vehicle....backing myself up so that I'm between the vehicle and the dolly. Set down dolly.
5) Remove dolly. Tip game, front first, into the back of the vehicle.
6) Lift the machine and slide it in, using mostly the leverage of the vehicle to support the weight of the machine.
I can easily do this myself. I'm 6'0, which probably helps with step 2, but I'm skinny and not particularly strong. I'm loading into a RAV4, which is probably closer to the height of a Grand Cherokee than a minivan.
Having a stool in front of the vehicle seems like it would make things harder and require two people. I haven't tried my system into a pickup truck, but I can imagine that the higher bed would make step 6 harder for a solo person. With any SUV it really should be relatively easy for one person to do the lift as long as you bend with the knees and use the lip of the car as a lever.
