Just go to Amazon and buy a Double Pole Single Throw (DPST) toggle switch with quick disconnects like the one linked below.

They all have different amp and current ratings... That's been the stumbling point for me... how do I know what ratings to go for?

Here in the US we generally use 20 AMP circuits for our homes and 120 VAC. This is rated up to a 250VAC and 20 AMP so you are good.

This isn't super critical. You are in the US, so you're going to use a switch rated for minimum of your mains voltage: 110-125VAC. You can go higher, you just can't go lower - so you might use a switch with a 250VAC rating if that's what is available. For the current rating, about 15A and up is more than sufficient.
