Here's my list:
70s: 1979 Gottlieb Count-Down. My first pin I can remember playing in high-school. I love all those targets.
80s: 1980 Stern Flight 2000. I think this is one of the hardest pins to get to multi-ball.
90s: 1994 Shadow. I never get tired of using the diverters and seeing the ball getting sucked into the Sanctum. Honorable mention: 1991 Williams Terminator 2. Great call-outs from Arnie and who doesn't like "load the cannon!"
2000-2009: 2003 Stern Lord of the Rings.
2010-2019: 2017 Jersey Jack Dialed In.

Here's my list:
70s: 1979 Bally Paragon. Super challenging. Difficult to master, but it will teach you control. This game is WAYYYY too cheap for how great it is.
80s: 1981 Bally Fathom. This game has everything...great artwork, tons of shots, that "play it again" feel, etc.
90s: 1997 Medieval Madness. This one is really tough. There are SO many great games in this decade. I could have easily gone with MB, TZ, or a few others. MM has it all...i just wish it cost less.
2000-2009: 2003 Stern Lord of the Rings. Total classic. Awesome game in every way. This game saved pinball.
2010-2019: 2013 Jersey Jack Wizard of Oz. A whole world under glass. It has every shot, tons of modes, it's SUPER deep, has a gorgeous light show, and it is built like a tank. It really ushered in a new era of pins.
I like innovative pins with tons of shots, a lot of difficulty, and that are great to look at...so my list largely reflects that.
The 90s decade we're by far the hardest for me to choose from.
