Flipper Football, although I understand it's low priority and I'm not sure how you'd go about fitting a ColorDMD in there...
I feel there's room for improving the animations. Going into screen test and stepping through frame-by-frame, there's a couple animations that aren't "perfect". Off the top of my head;
a) When a player is being knocked down and ball going past them, the animation appears to be missing a frame right before the player makes contact with the ground. The player is falling, but then sort of jolts onto the ground (like the animation skipped a frame, but none are omitted).
b) The same animation as above, once the player is on the ground, the last 3 or 4 frames are basically wasted showing the ball rolling away. The ball is at the bottom-edge of the DMD, so only a handful of pixels change each frame. It make the overall animation look frozen for a brief moment. IMO, this animation could have the last one or two frames removed, allocating the freed space to "fix" the jolt of the player falling.
c) The crowd animation appears to be missing a frame or two as it's not looped perfectly. It's not as profound as described above but there's still a bit of a jolt/snap as it loops.
It would be wonderful to have a replacement for the large 256x64 DMD as they seam to be unobtanium. My unit is still working but is definitely showing it's age. The brightness across the entire DMD is not even, when the display is solid (in test mode) you can see a bit of the Capcom logo burned into it.
